Cooking Recipes Corner: Eggnog Waffles:
(makes 6 large waffles)
Ingredients:
- 1 ½ cup of flour
- ½ cup
cornstarch
- 1 tsp baking
powder
- ½ tsp baking
soda
- 1 tsp salt
- 4 tsp sugar
- 1 tsp nutmeg
- 1 tsp
cinnamon
- 2 cups
eggnog (homemade or store-bought and low-fat or full-fat)
- 2/3 cup
canola oil or vegetable oil
- 2 eggs
- 2 Tbsp.
spiced rum
In
a medium bowl whisk together flour, cornstarch, baking powder, baking soda,
sugar, nutmeg and cinnamon. Set aside.In
a large mixing bowl whisk together eggnog, oil, eggs and rum. Add dry
ingredients into wet ingredients and whisk until just combined. Do not overmix.
Let batter rest for 30 minutes. Cook waffles according to manufacturer’s
instructions.
